Ingredients:
8 oz angel hair pasta
Salt (for boiling pasta)
1 tbsp olive oil (or oil of your choice)
1 lb chicken breast, cut into 1-inch pieces
2 carrots, sliced diagonally
1 and 1/2 cups broccoli florets
3 cloves garlic, minced
1 and 1/2 cups chicken stock
2 tsp dried basil (or fresh if available)
Ground black pepper to taste
Salt to taste
1/2 cup grated Parmesan cheese
Instructions:
Step 1: Cook the Pasta
Boil Water: Start with a pot of rapidly boiling water. Add some salt to make it taste like the Mediterranean.
Cook Pasta: Add 8 oz of angel hair pasta and cook according to package instructions, usually about 2 minutes.
Drain Pasta: Once done, drain the pasta and set it aside.
Step 2: Cook the Chicken
Heat Oil: In a frying pan, heat 1 tablespoon of olive oil over medium heat.
Cook Chicken: Add 1 lb of chicken pieces and cook until no longer pink, about 5-7 minutes.
Set Aside: Once cooked, remove the chicken from the pan and set it aside, keeping it warm.
Step 3: Prepare the Vegetables
Heat Oil: In the same pan, add a bit more oil if needed.
Cook Carrots: Add 2 sliced carrots and cook for about 3 minutes.
Add Broccoli: After the carrots are slightly tender, add 1 and 1/2 cups of broccoli florets and cook for another 2 minutes until tender.
Step 4: Make the Sauce
Add Garlic: Add 3 cloves of minced garlic to the pan and stir briefly.
Add Chicken Stock: Pour in 1 and 1/2 cups of chicken stock.
Add Seasonings: Add the cooked chicken back into the pan, along with 2 teaspoons of dried basil, ground black pepper, and a bit of salt. Stir in 1/2 cup of grated Parmesan cheese.
Simmer: Let the mixture simmer for about 4 minutes until the sauce thickens slightly.
Step 5: Assemble the Dish
Plate Pasta: Plate the cooked angel hair pasta.
Add Sauce: Scoop the delicious chicken and vegetable sauce over the pasta.
Garnish: Sprinkle more Parmesan cheese on top if desired.
