Ingredients:
1 and 1/2 cups rolled oats
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup softened butter
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs, at room temperature
1 tsp vanilla extract
1 cup diced firm cooking apples (peeled, if desired)
Instructions:
Preheat and Prepare:
Preheat your oven to 375°F (190°C).
In a medium mixing bowl, whisk together the rolled oats, flour, baking soda, salt, and cinnamon until combined. Set aside.
Cream Butter and Sugars:
In a large mixing bowl, add the softened butter, granulated sugar, and brown sugar.
Cream them with an electric mixer on medium to high speed for a few minutes until the mixture is light, pale, and fluffy.
Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition.
Add the vanilla extract and beat until combined.
Prepare Apples:
Wash and dry the apples. Peel them if desired, then core and dice them into small pieces. You can also grate them for a finer texture.
